The Best Roast Chicken

I know that's an awfully big claim, but seriously, you haven't tried this chicken!!! Before you read further, know that this recipe is a 3 day process, but the steps are so incredibly easy! It's just that you can't spontaneously decide to whip this chicken up a few hours before dinnertime. The key is using a dry rub and applying it two days before roasting it. So if I want this chicken on a Thursday night, I need to rub that bad boy up Monday evening or Tuesday morning. The rub is super simple - salt, pepper, and a few herbs. Letting it rest in the refrigerator for a few days means the flavor actually penetrates the meat rather than just sitting on the skin. This will leave you with moist, flavorful chicken.
The next thing I'm going to suggest that you may never have done is to cook it in the air fryer. Yes, you can roast this in your oven, but if you've read my past posts, then you know I'm a firm believer that #airfryersmakeeverythingbetter!!! I've cooked this chicken with both cooking methods, and while it will be incredibly juicy and delicious out of the oven, the air fryer does something magical to it. Roasting in the oven will also take a longer cooking time.
If you're curious, this is the air fryer I have. I do not get any form of payment for recommending this machine. I just like the way it has performed over the 2 years I have owned it. It's also not our first air fryer, but it's my favorite. I just noticed they now make a larger size - the 7 qt. Not gonna lie, I'm a little jealous.
So back to the chicken itself. With my 5.8 qt air fryer, I can easily fit a 6-7 lb bird, which is probably the largest I've ever found in my grocery store. If using the oven, I'd recommend a roasting pan with rack to allow for air to flow all around the chicken.
There is something so incredibly comforting about a roast chicken meal. I mean, there's a reason they say, "winner winner chicken dinner," right? I like to serve this with simple sides, a nice salad, some roasted potatoes. This time, I cubed up russet potatoes and tossed them in olive oil, salt, pepper, garlic powder, and oregano. Roast at 400 for 45 min and top with freshly grated parmesan cheese.
The Best Roast Chicken
· One 5-7 lb roasting chicken
· 1 ½ T kosher salt
· 2 t cracked black pepper
· 2 T chopped fresh rosemary, thyme, or marjoram. (or a combination)
· 1 onion, quartered
· 3 T olive oil
Rub the chicken all over with the salt, pepper, and herbs. Cover and refrigerate for 2 days.
Air Fryer Method:
Stuff the onion quarters in the chicken’s cavity. Pour 2 T olive oil over the surface of the chicken.
Place chicken BREAST SIDE DOWN in your air fryer and cook at 180 for 30 minutes
Carefully, use tongs to flip the chicken over. Brush with Olive oil and cook another 20 minutes or until the juices run clear. Use a meat thermometer to ensure the internal temperature is 75C / 165F.
Remove the chicken from the air fryer basket and allow to rest 10 minutes before carving.:
Preheat oven to 425
Stuff the onion quarters in the chicken’s cavity. Pour olive oil over the surface of the chicken. Place the chicken in a roasting pan fitted with a roasting rack.
Roast the chicken for 25 minutes at 425, then turn the temperature down to 375. Roast the chicken for approximately 1 hour more or until the juices run clear. Use a meat thermometer to ensure the internal temperature is 75C / 165F.
Remove the chicken from the pan and allow to rest 10 minutes before carving.
