Taco Tuesday - "cobb salad" tacos

Go with me on this. I was trying to figure out what to make for dinner tonight. We almost always have tacos on Tuesday because it's a no brainer dinner option and it's so fun to mix and match flavor combinations. Plus, who doesn't love tacos?! I had a serious craving for bacon this morning. Like major. I immediately thought of chicken bacon tacos - those seem legit, right? And then my mind started to play...we had spinach in the fridge, a few ripe tomatoes out in the garden and an almost-over-ripe avocado sitting on the counter. Lightbulb moment. If I snagged some blue cheese in my grocery order today we'd have everything to make cobb salad. And why couldn't I put that all into a taco shell? Cobb Salad Tacos were born. Maybe someone came up with this idea before me. I don't know, I didn't check. All I know is my stomach is happy and so is my husband.
Savory ranch chicken paired with crispy salty bacon, creamy avocado, and bold blue cheese make these tacos uniquely irresistible.

While we're here, let's talk about air fryers. I cooked my chicken in the air fryer because #airfryersmakeeverythingbetter. But you can easily bake the chicken like it says to in the recipe. I ALSO toast up my hard taco shells in the air fryer for a few minutes because they taste like they just came out of a deep fryer without all of the fat and calories. Seriously, you need to put your taco shells in the air fryer and then thank me later! You can also slice up soft tortillas and cook them in the air fryer for about 4 minutes for delicious crunchy tortilla chips, but I digress... An air fryer and tacos are a winning combination.
Let's make these bad boys!
Cobb Salad Tacos
Prep and cook time : 30min
· 1 lb boneless, skinless chicken breasts
· ½ packet or 3 T dry ranch seasoning
· 4 slices of bacon (or more because it’s bacon)
· Crumbled blue cheese
· Tomatoes, diced
· Baby spinach, chopped
· Avocado, cut into cubes
· Taco shells, pick your favorite
Preheat oven to 350
Toss the chicken with the ranch seasoning. You can marinate the chicken for a few hours for extra flavor, but mixing them together right before cooking is fine. Place on a baking sheet and bake for 15-20 mins or until fully cooked. Let chicken rest 5 minutes before thinly slicing.
*Air Fryer method – cook on 370 for 15 min or until fully cooked.
Cook bacon to desired crispness, drain, and crumble
Toast your taco shells either in the oven or air fryer. You know my vote!
Assemble in any order you like and devour.
Feel free to add other toppings such a sliced jalapeños or a little hot sauce. Cobb Salad typically includes hard boiled egg. If you want to try a little sliced egg on your tacos, I wouldn’t be mad at it.
