Pumpkin Spice Latte Coffee Cake

As soon as cooler weather hits, I am immediately in the mood for fall baking! Pumpkin everything is my favorite fall flavor, so when a coffee company called Javy reached out to me to try their coffee concentrate I knew exactly how to use it!

It seems like pumpkin spice lattes either elicit pure delight from a person or immediate eye rolls. For me, it's the former, but this coffee cake recipe is sure to please even the biggest PSL hater. The pumpkin flavor is mild and allows the coffee and warm spice flavors to shine through. It tastes delicious with your morning drink and makes a perfect pick me up snack mid-afternoon! While you can substitute the coffee concentrate for strong brewed cold coffee, I like the convenience of a concentrate. I don't have to make a batch of coffee and wait for it to cool down to use it for baking. AND Javy coffee concentrate makes really great cold brew drinks! Pumpkin Spice Latte Coffee Cake

For the Streusel
1 C flour
1 C brown sugar
1 tsp pumpkin pie spice
1 tsp vanilla extract
2 tsp Javy coffee concentrate or 1 T espresso powder
Pinch of salt
½ C (1 stick) cold butter cut into cubes
For the Cake
2 ¼ C flour
2 tsp pumpkin pie spice
1 tsp baking powder
1 tsp baking soda
½ tsp salt
½ cup (1 stick) butter, softened
1 ¼ C white sugar
3 large eggs at room temperature
1 T vanilla extract
1 C pumpkin puree
1 C whole milk or heavy cream
1 T Javy coffee concentrate or ½ strongly brewed cold coffee
Streusel
In a food processor or by hand, mix flour, brown sugar, vanilla, spices, and coffee concentrate. Add in cold cubed butter and pulse until it resembles coarse crumbs. Set aside.
Cake
Preheat oven to 350 F
In a small bowl, mix flour, spices, powder, soda, and salt. Set aside.
In a mixer, cream butter and sugar together
Add in the eggs and then vanilla and pumpkin puree
Mix together the milk and coffee concentrate.
Next, alternate adding in your dry ingredients and whole milk/coffee mixture.
Spread half of your batter evenly in a greased 9x13 pan
Sprinkle half of the streusel mixture on top
And then add the remaining batter.
Finish with the rest of the streusel topping, making sure it’s evenly spread.
Bake at 350 F for 50 minutes.
Let your cake cool and enjoy with your favorite morning drink!
