Ginger Chocolate Chip Cookie Bars

I found this recipe in a Real Simple magazine the Christmas Tim and I were engaged. We have made them every Christmas since then, and the holidays are not complete without a batch of these soft, chewy, bad boys! You and download the recipe at the bottom of the page!

These are not your typical cookie bars or blondies. The addition of ginger, cinnamon, and clove adds warmth while the chocolate makes them purely decadent. They go really great with a hot cup of coffee or cocoa. Once you make these, you will probably not be able to stop eating them!

I found these adorable matching aprons at Target this week as part of their Wondershop collection for Christmas. Jackson LOVES to help me in the kitchen, so I couldn't resist a mommy and me look! Any opportunity to create a special memory with my sweet boy is one that I grab onto! And we look pretty great, right?! Now back to the cookies! I only make these once a year for Christmas, so as soon as the smell of warm ginger hits the air, my husband knows I'm in Christmas baking mode! You can download the full recipe at the bottom of the page.


Ginger Chocolate Chip Cookie Bars


Hands on – 15 minutes

Total – 1 hour 5 minutes


Ingredients


· 1 C (2 sticks)unsalted butter at room temperature, plus more for the pan

· 2 ¼ C all-purpose flour

· 4 tsp ground ginger

· 1 tsp cinnamon

· ¼ tsp ground cloves

· 1 tsp baking soda

· ½ tsp salt

· 1 ¼ C light brown sugar

· 1 ¼ C granulated sugar

· 1 tsp pure vanilla extract

· 4 large eggs

· 12 oz semisweet chocolate chips

Directions


1. Heat oven to 350F.


2. Grease a 9x13 baking pan with butter.


3. In a large bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.


4. In a separate bowl, beat the butter and sugars, using an electric mixer, until fluffy. Add the eggs and vanilla and beat to combine.

5. Gradually add the flour mixture, mixing just until incorporated. Mix in the chocolate chips.

6. Spread the batter evenly in the prepared pan and bake until a toothpick inserted into the center comes out clean, 40-50 minutes. Cool completely in the pan and cut into bars.
