Easy Sheet Pan Chicken with Roasted Veggies, Apples & Bacon
This is one of my family's favorite cold weather recipes! Even my picky 5 year old will happily dig into his plate! If you put bacon on it, he'll eat anything! I didn't even personally love Brussel sprouts, but this recipe changed my tune!
It checks all of the flavor boxes - salty bacon, sweet roasted potatoes, tart caramelized apples, and tender savory chicken. I also love that this recipe is easily customizable! For the vegetarian, simply skip the meat and serve with tempeh or beans. Want extra veggies? Carrots, parsnips and golden beets would taste delicious! You can even swap out the chicken thighs for boneless skinless breasts for a lower fat option!
Roasting everything together on one pan ultimately saves cooking time and makes clean up WAY easier! The flavors meld together and the higher roasting temperature crisps the bacon and caramelizes the veggies and apples. Is your mouth watering yet???
Tip, for a shorter cook time, simply cut your ingredients into smaller pieces!

Easy Sheet Pan Chicken with Roasted Veggies, Apples, & Bacon
2 lbs skinless chicken thighs
2 large sweet potatoes, peeled and cubed
1 lb brussel sprouts, halved or quartered depending on the size
2-3 apples, cored and cubed
½ lb bacon cut into 1 inch pieces
For the Marinade
2 T olive oil
2 T red wine vinegar
2 T maple syrup
Pinch of cinnamon
Salt and pepper

Preheat the oven to 400.
In a small bowl, mix the olive oil, vinegar, syrup, cinnamon, salt and pepper
In a large bowl, toss the sweet potatoes, sprouts, and apples with the marinade.
Lay your chicken thighs on a parchment lined baking sheet and season with salt and pepper
Spread out your veggie mixture around the chicken thighs, making sure the chicken is NOT covered.
Top with bacon.
Bake for 1 hour or until the chicken reaches an internal temp of 165. Note, for a shorter cook time, simply chop your ingredients smaller!
