Chocolate Covered Strawberry Baked Oatmeal Recipe

One of my favorite winter breakfasts is baked oatmeal. If you're not familiar, it's like oatmeal and cake had a baby, and then you caramelize brown sugar on top and drown it in milk. Baked oatmeal is pure comfort food and so simple to make!


The bonus is that you cook once and have breakfast for the whole week! Plus it also freezes beautifully. This chocolate covered strawberry version is loaded with fresh fruit, melted chocolate, and perfect for Valentine's Day morning!

This recipe can be made into oatmeal muffins or as a 9x13 casserole. I found these adorable Valentine cupcake liners at Home Goods and my family is going to love this sweet but healthy Valentine treat!

Chocolate Covered Strawberry Baked Oatmeal


Makes 1 - 9x13 pan or about 20 muffins



Ingredients


· 1/2 brown sugar, plus more to sprinkle on top

· 4 C old fashion rolled oats

· 2 tsp baking powder

· 1 tsp cinnamon

· pinch of salt

· 1 ½ cups chopped strawberries

· ½ C mini chocolate chips, plus more for sprinkling on top, if desired

· 2 T melted butter

· 2 eggs

· 3 cups milk (any kind works – I use almond milk)

· 2 tsp vanilla


Directions


1. Preheat oven to 375.


2. In a large bowl, mix together the brown sugar, oats, baking powder, cinnamon, salt, strawberries, and chocolate chips.

3. In another bowl combine the butter, eggs, milk, and vanilla.


4. Add the wet ingredients into the oat mixture and mix thoroughly.


5. Grease a 9x13 baking pan or add liners to a muffin tin.

6. Pour mixture into your pan or muffin tin and sprinkle with extra brown sugar (and chocolate chips if desired!) Bake for about 30-35 minutes or until a toothpick comes out clean.


To serve, place a square of baked oatmeal in a bowl, pour warm milk over it if desired, and enjoy!
